At 1.32am, Fire Rescue Victoria (FRV) responded to an incident on Ballarat Road, Deer Park after callers to Triple Zero (000) reported a shop fire.
Firefighters arrived on scene within four minutes to find a single-fronted shop in a row of approximately 20 shops heavily involved in fire, so the response was escalated.
FRV crews wearing breathing apparatus established hose lines and attacked the blaze, containing it to the shop of origin and preventing any further fire spread to adjoining businesses.
The shop of origin sustained significant damage and five surrounding businesses sustained smoke damage.
One person evacuated safely from the premises and was assessed by Ambulance Victoria.
The fire was deemed Under Control by 2.21am.
The fire has been deemed suspicious and will be investigated by Victoria Police.
